With emergence of summers mangoes are available in abundance.
We often make mango shake and mango sharbat from mangoes but today we will make mango muffin.
Mango muffins will be liked by all, especially kids.
Let's see what all ingredients are required for making mango muffin.
Maida - 1 cup
Mango pulp - ½ cup
Condensed milk - ½ cup
Powdered sugar - 1/3 cup
Milk - ½ cup
Butter - 1/3 cup (melted)
Cardamom powder - ½ tsp
Salt - less than ¼ tsp
Baking soda - ¼ tsp
Baking powder - 1 tsp
For making mango muffins we will prepare batter.
For this mix and strain the dry ingredients.
Add maida, baking powder and baking soda in a sieve and strain.
Now mix liquid ingredients.
For this take condensed milk in a big bowl and add butter and mango pulp into it.
Mix all ingredients really well.
Add cardamom powder and salt as well.
Also add powdered sugar.
Add the maida mixture and mix well
Add little amount of milk as the batter is quite thick.
Batter is ready; now we will bake muffins.
Preheat microwave at 180 degree centigrade.
Meanwhile prepare muffins.
We have taken silicon muffins cups or you can also take aluminum tray.
We can directly make muffins in this or place paper muffins cups over it like this.
Grease the muffin cups with some oil.
Now pour batter into it.
Fill them upto ¾ parts.
Tap them like this and place in tray.
Set the microwave at convection mode for 20 minutes on 180 degrees.
Place the tray over the net stand.
Fill rest of the batter in this tray.
Grease the paper cups with some oil.
If making directly; then grease the molds with some oil.
After 20 minutes take out the muffins form microwave.
Within 20 minutes golden brown muffins are ready.
Store the mango muffins in a container after they cool down completely and enjoy eating for upto 7 days.
