on homemade sandwich white bread
I am again back with my another recipe which is eggless chocolate muffins
Let me show you the ingredients that we need for this recipe
1.5 cup of All-purpose flour, 1 cup of refined sugar, 1/2 cup of milk, 1/3 cup of Oil
1/2 tsp baking soda, 1/2 tsp baking powder, 1 tsp coffee powder, 3 tbs cocoa powder, chocolate chips
Vanilla essence and vinegarNow let's start the recipe
In a bowl take milk, oil and add 1 tsp of vanilla essence
Now start mixing
Now add sugar and mix it well
Now mix all-purpose flour, baking soda, baking powder, coffee powder and cocoa powder
With the help of sifter, sieve all the dry ingredients together.
Gently fold all the dry ingredients into wetingredients and make a smooth batter
Use the cut and fold method
We need a smooth batter for our muffins
In case you feel your batter is too thick,can add little more milk
Add 1 tbs of vinegar in the batter.
You can use any unflavoured vinegar.
Mix it and keep the mixture aside for at least 5 minutes
When vinegar will combine with milk and baking soda, It will react and give the soft texture to our muffins
Meanwhile preheat the oven at 180 Degree C
After 5 minutes, take a muffin mould and place muffin liners in it
And with the help of a spoon fill the muffin liner upto 3/4th.
You will get about 9 muffins with this batter.
Sprinkle some choco chips. Bake the muffins in the oven at 180 degrees C for about 25 minutes
Place the muffin tray on the middle rack
And bake these muffins for about 25 minutesAfter 25 minutes, take out muffin tray from Oven
Take a tooth pick and check the muffin
You can see that there is no batter on thetoothpick
It means the muffins are completely bakedNow, take out the muffin and demould them
Allow the muffins to cool downAfter 5 minutes let's check the texture of the muffin
As you can see these are looking yummy and soft. See the spongy texture of the muffin

While searching how to make muffins without eggs, I found most of them were either with condensed milk or with yogurt. I wanted to make Eggless muffins without condensed milk as I realized it’s not feasible to have these two products at home every time. I wanted to work on an eggless chocolate chip muffins that can be easily done at home without any special ingredient. So what could be the substitute for sweetened condensed milk or yogurt? Both of these are dairy products so why can’t I use milk which is easily available in everyone’s kitchen. This led me to my final recipe. It did take a few experiments and failures before I learned how to make eggless chocolate muffins. These muffins without eggs have perfect texture and taste. Finally a no-fail recipe.
